Amazing Trip to Singapore with Garuda Indonesia..

Hello! How is everybody? I'm good, and feeling very good B) because today I'm going to tell you my Amazing experience in Singapore. I went to Singapore last year before new year until early this year. Last month, I also went to Singapore for medical purposes. Singapore is the best place for everything, from medical to Indian, Malay, and Singaporean Cuisine and Shopping, especially if you fly with the one and only Garuda Indonesia. :):)

Did you remember my trip to Singapore last year? Winter Season! Christmas Cupcakes! Today, I'm going to continue my experience. It was a very good holiday because I lived in Hardrock Hotel near Universal Studio in Sentosa Island and ended my holiday in Costa Victoria Cruise...

Since I lived in Sentosa Island, I went to Universal Studio. I'm so Happy! because I got more medallions! In every amusement park like Universal Studio, Disneyland, Dream World, Sea World, etc around the world, you can made Penny Medallion! I'm collecting it. I have hundreds of medallions from Singapore, Japan, Australia, Europe and America. Are you one of medallion collector? Lets trade!

Beside collecting medallion, usually I buy turkey's drumstick. You know, the giant turkey's leg that make you feel like a Flint Stone. hahahaha.. but I did't buy it there due to the heavy rain that ruined everything. Thankfully, the rain last for about an hour. So I still had time to play many rides including Mummy, Galatica and Jurassic Park.

I also went to Candylicious, Singapore's Chocolate dream maker. Hersey, Nutella, peanut butter cups, Jelly Beans, M&M in spectrum color and many more. I bought Hersey's chocolate chips and many weighted candies. My mind was thinking about thousands ideas to make something sweet even sweeter with those candy. My little cousin was having fun with sour sand candy. He is so funny, the way he teach his sister is very cute!

Every time I go to Singapore, I always go to Mustafa in Little India. This time, I went there with my family and bought lots of things. My Mom always buy raisins and other snack, my Dad looking for interesting stuff there, and my Sister always look for healthy snack like low calories bar, etc. There, I always buy my imported ingredients like: brown sugar (in Indonesia they sell the substitute "Palm Sugar" that taste little bit different), powder food coloring (for Macarons), flavoring, chocolate chips, and many more. Beside buying those ingredients, I also loves to look at the packaging there. It gives me inspiration! One hour is never enough in Mustafa. Everybody busy with their own things, and being lost is usual! hahaha..

Speaking of India, my one of favorite food is Samosa. I mean Indian Samosa, not the frozen one with lots of vegetables. In Singapore, almost everywhere, I can find very good samosas. Maybe because the cook is Indian. I ate 3 samosas there. :):) yummm ..


Many FUN things to do in Singapore, especially if you fly with Garuda Indonesia! Feel the difference and enjoy.. :D

Corn Dog! With Real Corn!

Helllllloooo! Long, long time no see. :D How's everybody? Hope you all enjoy your summer holiday because I had an awesome summer this year. I went to Europe (Netherlands, Belgium, Paris, Swiss until Italy) and Thailand. That 2 places are totally different. Europe is expensive for everything and Thailand is cheap for everything. In Thailand, I bought fried insects sprayed with soy sauce! Real maggots, grass-hopper, and cockroach! It cost me about 50 Bath, or about idr 15 or $1.5 . Some of it just taste like insects (GROSS!) and some other are pretty good, salty and crispy :P

By the way, in floating market, I also found Corn Dog in ball shape. It was very unique! I bought it and it just taste like other corn dog, without CORN!

About 2 years ago, I found this good recipe by HILAH Cooking. I made it with some changes. Now you can make your own corn dog, WITH Corn :D


Corn Dog, with Corn

Ivan Wongso
Ingredients:
1/2 cup Polenta OR Cornmeal
3/4 cup All-purpose flour
1/2 tsp Salt
1/2 tsp Baking powder
¼ tsp baking soda
1/2 cup Canned Corn Soup (cream style)
1/2 small Onion, puree using cheese grater or food processor
1/2 cup Fresh milk or Buttermilk (add a tablespoon of vinegar to 1/2 cup of fresh milk)
1 Package of Mini cocktail sausages (About 20 sausage) or regular Hot dogs
Oil to fry
Tooth pick or Wooden skewers

Steps:
  1. In a bowl, mix together canned corn soup, onion puree and milk or buttermilk. Set aside.
  2. In other bigger bowl, whisk polenta, flour, salt, baking powder and baking soda until well blended. Then add the liquid and whisk until thick and well blended. Set aside.
  3. Set your sausages, suck it with wooden skewers. Preheat you oil in med (about 5 cm)
  4. Dip your sausages to the batter and fried it immediately until golden brown.
  5. Drain the excess oil and serve!
In Indonesia, it is hard to find Polenta or commonly said as cornmeal. Polenta is ground dried corn. Usually used for dusting in pizza. I bought mine in Europe (Netherlands) that cost me only about $1-$2. Very cheap. In Indonesia, it is not common and expensive. If you want to make this recipe without polenta, I believe you can changed the amount of polenta with all purpose flour.

Indonesian Orchid Cupcake (Kue Kukus)

Hello! Yesterday, I had an awesome time playing with my sony waterproof camera. We (me, sister and parents) swam in our swimming pool at Villa and took a lot of photos. :P

Today, I'm going to share with you my steamed "cupcake" recipe..


Indonesian Orchid Cupcakes - "Kue Kukus"
Ivan Wongso
Ingredients
250 gr All Purpose Flour
250 gr Sugar
10 gr Milk Powder
1/2 tbsp Cake Emulsifier (SP, Ovalet or Starkies)
2 Large eggs
180 ml Sprite (for white cupcakes), Fanta (for colors)
Food coloring or flavoring (optional)

Steps
  1. Preheat your steamer until the water boiling. Line "Kue Kukus" mold (shaped like individual cupcake pan with holes all around it) with cupcake liner.
  2. In a mixing bowl, mix and beat all the ingredient using whisk attachment (Kitchen aid) or regular hand mixer until light, fluffy and thicken (about 5 minute using kitchen aid on high speed).
  3. If you want to create "ombre" cupcakes, divide the batter to 3 bowl and add food coloring until desire gradation color. Then transfer the batter into piping bag.
  4. Fill the cupcakes mold full with the batter. (IMPORTANT: fill it full or you will not get "orchid" shape cupcakes)
  5. Steam for 20 minutes. Let it cool in the mold, and Done!

Rainbow Slice Cake! Ramadan is Coming..

Hi everybody! Next month, Muslims start to fasting on the occasion of Ramadan. And usually people start to give cake or cookie to each other. Today I'm going to share my Rainbow Slice Cake recipe to you, so you can make your own for your love one!

Rainbow Cake Slice (Steamed)

Ingredients
Wet
7 Large Eggs (60 gram each)
270 grams Sugar
1 1/2 tbsp Cake Emulsifier (like SP, Ovalette but I prefer Starkies)
Dry (mix & sieve)
180 grams All Purpose Flour
60 grams Cornflour 
60 grams Full cream Milk Powder
Melt together
225 grams White Milk Chocolate 
150 grams Butter
Coloring
6 Rainbow food color (Red, Orange, Yellow, Green, Blue, Purple) or Rainbow Paste flavoring (like Golden Brown-Indonesia)

Steps:
  1. Preheat the steamer with enough water. Make sure the water boiling. Line the base of 22x22 x7 cm pan with baking paper and oil.
  2. In the mixer bowl, using whisk attachment, beat the wet ingredients until ribbon stage (Double in volume and thick).
  3. Beat in the dry ingredient until well combined.  
  4. Last, beat melted butter and white chocolate in high speed for about 30 seconds until well combined.
  5. Divide the batter to 6 bowl (about 220 grams each) and mix with the coloring.
  6. Steam each color for 10 minute start from purple to red.
  7. After all, steam 10 more minute. Steam never make the cake burnt.
  8. Let cool completely for 1-2 hour. Cut the sides, transfer to cooking rack, remove the paper then transfer to cutting board.
  9. Slice the cake to 3 column, then slice each column to 20 slices.
  10. Wrap in plastic packaging and done!
Secret of beautiful rainbow: Use small amount of food coloring, increasing if necessary. Never use too much food coloring or people will frightened :O. Boring of rainbow? Make Ombre! Choose your favorite color and color the batter with different shades. 
Pack your cake in a good tin or box and give it to your love one!

BAKERHOLIC Contest! African Beauty..


Hi everybody! Last month, I won FIRST place with point 99 on Bakerholic "Chocolate Mania" decorating cake contest by Arvian. The theme of the competition is Chocolate Revolution. Inspired by the pattern of leopard, I decided to make with African Beauty as my theme.

 The rules of the competition are 1) The cake must be more than 25 cm in diameter or side 2) Must be using They's Chocolate and Tigerson Transfer sheet 3) One cake, One quickbite; and many other rules. This is a group competition with max 3 person in the group. My group is simply me and my mom as my "assistant" :P.

While I'm making the cakepops, mom arranging the chocolate fences to the prepared cake..
We work for 2 hour and finally done with amazing result!
After 2 hour passed, the judges take action :D :P..

And I think they quite impressed by my work :P. Gerry (The white clothed chef) asked me about the tools that I use. And many people look excited with my work. :) :)

Cake Pops! Cake on a Stick..

Hi everyone! Today I made cookie monster cupcakes and red velvet cupcakes.. Plus, I made Matroska Cake pop.. :D Do you know what is matroska? Matroska is Russian doll. And, since I promise to share about cake pops, lets talk about Cake Pops!

Do you remember in Welcome home MOM and DADDY.. :D , my mom brought me a pair of cake pops from USA? It was a trend in USA since 2012. But not in Indonesia. After my mom bought me a cake pops book from Bakerella, the founder of cake pops, I was inspired. So in 2013, I started making cake pops for making a new trends in Indonesia. Inspired by POPBakery in UK, I made several design of Painted Cake pops. Yes! All HAND PAINTED and using edible paint for food.

Do you know what is cake pops?? Cake pop is cake, crumbled, mixed with frosting, then formed into balls or other shapes, and dipped into melted chocolate. Cake pops that I made are in 2 flavor right now, Vanilla and Chocolate Rum. For vanilla, I'm using vanilla buttercream and for chocolate rum, I'm using chocolate ganache and real Jamaica rum :9. My favorite in chocolate rum, even my friend at school was addicted because of the rum.. (LOL:P) For the chocolate coating, I'm using white chocolate, dark chocolate, or colored and flavored chocolate. Since there isn't any Candy Coating like in US, to thin up the chocolate, don't use shortening because shortening made the chocolate kinda soft that make oily stain in the plastic packaging. In Indonesia, specially in Surabaya, there are coating fat that act much better than shortening. It does make the chocolate thin, but hard like original. In addition to colored chocolate, sometimes I do like to have stronger or deeper color, and what I use is Wilton candy color and Colatta candy color (Colatta is Good brand of Indonesian cooking chocolate), both of them are oil based, and you must use OIL based food color.






Owl Cake pops was my first success cake pops.. and its turned out great! The eyes was hand made using dried royal icing and the nose is using mini M&M.
Secret in the size of my cake pops is: I'm using mini ice cream scoop to divide the cake evenly, each ball weighted about 20 grams. For Matroska, the head is about 10 grams and the body is 20 grams..

Cake pops is a unique way to deliver the sweetness in life.. :D :P

Ombre, New Trend in Cake World..

Hi everyone! Today, I took my report for the first quarter in this second semester. The result was pretty good, nothing below 80 :). So, since today was no class, I'm going to tell you about Ombre.. :D

Many people didn't know what Ombre is. And Ombre is the new trend after Rainbow, since now many people (especially adults) are scared to the Bright color of rainbow (now I made Pastel colors rainbow that are prettier :P). So, What is Ombre?
Ombre is gradation of color. It can be from darker color to light color and from one color to range of color. For examples, from dark blue to light blue (or white) and from dark pink to ivory. Ombre made everything unique and modern.

What do you thing about Ombre? You can also dye the cake with food coloring with different drops of food coloring to make ombre cake, or simply decorate your favorite cake with ombre dyed butter cream or fondant.. Yes, it is time consuming, you many more bowl for dying the butter cream or you need to kneed the fondant with many color, but the result is worth it!

For my Ombre Modern Cake, I used Navy Blue with different amount of food coloring in each stage. For the Ombre Ruffle Cake, I used Holiday red and the mix of Yellow and Ivory.

Easter Is Coming! Spring Season!

Hellooo! How is everybody? Happy Valentine's day and Chinese New Year! too late! Sorry.. :P
Actually, I'm going to give you a project in February.. But, I don't have enough time to write in this blog.. So maybe later.. :)

SPRING BREAK!!! Yayy! Yesterday is my last day of school, and next week full is holiday! And I'm going to dentist next Monday, and something new will appear on my teeth for 3-4 years.. (You know?) :)

Last Thursday, I baked a batch of cupcakes for BakeSale in my school. And I thought Easter cupcakes must be great! Yes it's true, the cupcakes was sold out. I'm glad everybody like it. The cupcakes were sponge cupcakes topped with American Buttercream (Very sweet, and grainy texture) and decorated with mini pastel egg candy and pearl jimmies.

Anyway.. Today I made ombre modern cake.. Ombre is popular now.. Do you know what ombre mean?
Actually, I already made several ombre, ruffled ombre cake and modern ombre cake.. I will talk about it later.. Maybe next week.. :):D

Winter Season! Christmas Cupcakes!

Hi! How is everybody? My oldest sister, Amy, told me that Philadelphia is just snowing lately. She is in USA now for collage since August 2012. :)

What did you do last Christmas? Last year December, I went to Singapore with my big family. It was a great holiday! I went to Universal studio, eat a lot of Indian Samosas :9, Garret's Popcorn, and other stuffs.. :D

I enjoyed spend my holiday in Singapore specially because I can buy my imported ingredients like Brown Sugar, Hersey's Chocolate chips, Rose water, Dried Strawberry, etc. from Mustafa and other shops in Singapore..  :P

Before I went to Singapore, I received an order of Christmas cupcakes:
HO HO HO Cupcakes are using perfect dome technique.. :)
What do you think? :D The first cupcake was decorated by using buttercream with crystal sugar coated, then decorated with fondant. For the Christmas tree cupcake, I pipe using large star tip, then decorated using fondant and quins. The traditional Christmas plants, I'm using leaves plunger, start with green to red. Santa and Rudolf was all hand made and painted. HoHoHo and Gold ornament are hand painted and made using special perfect dome technique.

That was my last order in 2012. And, by the way, last November, All Things Cupcake Indonesia officially 2 years old! Thanks  to God, my Families, Friends and my lovely Customers that always support me.. :D
